Behringer FCB1010 with UnO4Kemper chip.Hopefully in a few weeks time we'll see the Kemper controller though.

+1 for the Kemper controller but at the moment my personal favorite is the Roland FC-300. 2 expression pedals with programmable toe switches, it gives me 4 midi CC's and 5 presets per bank in standard mode, I can also switch to CC mode on the fly giving me 9 CC switches and I can also program the display for each preset to say what ever I want. I use this and a FCB1010 for most shows but if a stage has limited space I leave the Behringer in the truck.

Would any midi controller such as the tech 21 midi moose work?

The other guitarist in my band uses a Midi Moose, and it works great. It only sends PC commands though, no CC. So that means you can't switch individual stomps on and off with it, but it works perfectly for changing rigs. Jeff Loomis uses a Midi Moose as well.
I have a Roland FC-300 myself, and I'm with @Booyah on this. It's a great controller, and the build quality is outstanding. Miles beyond the FCB1010. Of course, it costs 3 times as much as the FCB as well...

I use a Voodoo Labs Ground Control Pro with Ernie Ball expression pedal most of the time. I sometimes use a Vox Tone Lab Se. Both work really well.

I got the Midi Moose for simplicity. It works switching rigs in performance mode right out of the box, and I create rigs with the effects I want already set up, so it doesnt matter to me that I dont have effects toggles on the board, I just change the rig to whatever preset I would want.

I'm using the Roland pedal as well. I think it's a great pedal and I prefer it over the Behringer although bidirectional communication is not possible.
I got mine used for 200€, so it's just double the price of a used Behringer
I really like being able to send nrpn messages. I'm using this for boosting rig volume for solos. -

best way for me... cause you can use 4 buttons for the on/off-switching of stomps, another 4 buttons for effects on/off and 4 buttons for switching between rigs.
Bank up and down... everything exactly like my older 4-channel-amps-switching-setup with effects...and the best: programming the GCP is very easy...
you can switch on and off of all effects and stomps like you have programmed it in the Kemper...I´m more than happy with it!

I'm using the Pedal in Patch Mode and have CTL1 setup to send a sysex message when switching on and off. I looked up the numbers in the MIDI documentation but I don't have my FR300 with me. I might be able to check on the weekend.You can try using the example on page 11 which tells you how to change the delay volume. You have to exchange the controller MSB and LSB (green) with from 4A 04 (which is 74 04 in decimal, compare page 9: delay is number 74, volume is 4) to whichever volume you want to use for the volume boost.
I'm using Rig Volume which should be 04 01 (both in hex and decimal), see parameter list on page 7 of the midi documentation. The blue number is the value, 40 00 equals 50% you can either calculate or just try how much you need for your boost.
You can also control Cab or Amp Volume via NRPN to use this as a boost. -
