Awesome! Some improvisation with riffs and solos would be cool just to show the sound of profiles. In this order standard tuned 6 string, detuned six, and detuned seven.

Should those demos use the rig as is - or should they be fine-tunded to the particular guitar the demoist (a word?) is using...?

I reckon any demos should be using the profiles as is, preferably with a range of different guitars/pickups.

It's up to demoist but it could be 50/50.
