I have two pairs of these and for the bucks they're great! I've used 'em for nearly 15 years 
I highly recommend Sennheiser HD280 Pro. They sound great and aren't that expensive. Their design also minimises sound escaping, which is good for late night.
I can also vouch for Sony professional headphones. Always top notch.
I really like my Beyer DT770 Pro's for playing guitar. I have the 80 Ohm Version, so it's just on the edge to "loud enough".
A lot of people also like the Audio Technica MT50x or MT40x. Myself, I use the KRK KNS 8400.

I'm definitely NOT a fan of the Sony 7506's. Too much of a spike up in the 1-2k range which makes them very "exciting" sounding but it's too brutal for me for guitar. I suppose they might get better over time. Anyway...
The Sennheiser HD600's are just wonderful. I haven't personally heard a better sounding set of headphones... for anything.
I would suggest to use InEar's instead of headphones.
Learning to work with in-ears will help also for live giging.
Later on you can buy a Wireless System,
Professionals working with in ears all the time live and in studio and they know why.
I do not understand why people paying more than 1000 USD for a FRFR Box for monitoring but not willing to pay 300 bugs for in-ears.
If you play metal or jazz anyway every FOH tech will be very happy if you are not so loud on stage.

Imho a good choice.
Went from some Headphones (AKG,BD) thru the Shure SE215 .
More linear sounding.
Second that for in-ears. Headphones are always a massive compromise (a.k.a. they suck, no matter what) when it comes to monitoring guitars, in-ears at least are practical to use on stage (if you are gigging) so getting used to them is a good skill to have.
I use a pair of KRK Headphones at home, they are all right, but I use them maybe twice a year.
Direct Sound EX-29. Even great headphones for live use, because of 29db noise isolation.
I've used most of the cans mentioned here (Sony, all the Beyer DT series, Sennheiser HD280, etc) and it was a HUGE eye opener for me using the HD600. I heard all kinds of things in mixes I'd never heard before. Everything just sounds "right", especially the Kemper.
But you also mentioned being "quiet" and the HD-600s are open back. So while I wouldn't have thought of it at first, investing in some good in-ears is probably not a bad idea, especially if you plan to play live much.

The HD600s are awesome - but as you say, they're open back, so you will hear the pick hitting the strings coming through the amped tone

I have HD600 and HD25 (+ several other) and like the HD25 more with kpa
I’m very happy with my two sets.
Shure SRH 1440 is my main headset. I can play for hours with that set. They are very revealing, so it took me some time to get used to them.
I’m also using a Sennheiser HD-25 set. They are probably a bit more “guitar friendly”, but not as honest as the Shure set. On the other hand they effectively shut out the surrounding sounds of drums and other noise. I use them mainly when finding the right spot for mic placement before profiling and when refining.

I use these as well. Good all around for listening/reference/recording.
They are a bit tight fitting, but sound great.
