Dumb question but can I just use a standard cat-5 network cable?

I think that should be fine. There is an issue with long cables not being able to send the power apparently.

CAT 5 is the standard that Kemper mentioned in the documentation.
But it say nothing about core cross section.
AWG 24 allows max lenght 7,5 m. AWG 26 allows amax lenght 5 m.
Thinner cross section should not be used.
For connection to the remote an "etherCON -plug " for mechanical protection is highly recommended.
I would sleep better if the KPA needs also plugs with mechanical protection

If you don't want to use the original cable, bridge longer distances and want to be on the safe side, then use a PoE injector. With such a PoE injector you can use any ethernet cable and bridge distances of up to 100m (300 feet). Not a big investment (about 20 Euros), but makes sure, that your Remote receives sufficient power.
