Hi, another newbie here. Do I need to connect both outputs of the EP1-KP to the remote if I want to use the expression and switch option of the pedal or would output 1 be sufficient?

Both. A TRS (stereo) for the expression and a TS (mono) for the switch.

Do you also know what length patch cables are sufficient?

Can't say for certain (I don't use the remote) but looking at a 0.6m patch lead (I do have those!) I would have thought that would be sufficient.

Even 0.3m patch cables are sufficient, if you connect to the sockets on the same side as you place the pedal.
The TS-cable is only required, if you want to use the toe switch.

It would be easier to setup and breakdown using (2) TRS cables, instead of (1) TS and (1) TRS, it's a hassle trying to figure out which cable goes where. If you have (2) TRS, you can't plug it in incorrectly.

I actually prefer one TRS and one TS for that very reason. It’s too easy to plug the wrong cable into the wrong input on the remote if they are both the same. The TS connects to the footswitch on the EP1 but the TRS connects to the EXP pedal so getting them mixed up is more likely in my experience when they are bpth the same.
That’s just my personal experience though. Whatever works for the any individual is cool.
