Dialing in a few things in hopes of using the Kemper Rack at a gig in a week or so. I think I have successfully separated the master out and monitor outs so I can control my stage volume without changing the feed to FOH. My question is does it matter if the Master out is stereo or mono? I'm not sure I need to run a left and right out to FOH or just one channel. I don't think any performances are setup in stereo...

Unless stereo plays a critical role in something, such as obvious left<->right movement or bouncing delay repeats that a song just can't do without (I'd question this in a live situation anyway), then IMHO no, it doesn't matter.
From an engineering / mixing perspective, a mono feed allows for quicker control overall - better panning focus and easier frequency-positioning in the mix, for example, for whoever's FOH anyway.

Is the FOH stereo? Most aren't I bet. In that case a single XLR is all you'd need.
