I've noticed I have the main amp I want to use in large letters on the front as usual, but above it is a smaller text with three lock icons above it. How do I unlock this as whatever profile I change to it seems to use the amp in the smaller font?

Press and hold the lock button. Whatever is locked will show show a light. Once know, press the button for what you want to unlock, then press the lock button to unlock (turning the lock button light off for whatever you selected). Remember that Browser and Performances each have their own locks.
If unlocking doesn't solve it then you've probably somehow saved the changes into whatever you're loading.
You seem to have locked the stack section with amp, toenstack and cabinet.
Be aware that the large letters are not necessarily the amp name. It's the Rig Name. And the Rig Name could indicate different things: an amp or an artist sound or a partiocular song.... Depends on what people want to highlight and use it for. Amp Name and other amp related tags can be found within the amplifier module.
