So what cable do I need to record digitally or efficiently on my MacBook Pro? It has the headphone 3.5mm jack that doubles as an optical in.

Are you sure about that? I'm not familiar with the newer Macbooks, but my 2012 model only had an optical out, but no optical in.

You'll need an USB audio interface, I use a Scarlett 8i6 - but there are cheaper ones that work as well as.
I actually find it surprising that I need to buy anything other than a cheap cable. Oh well.
Can I go through my POD HD somehow?
Or use an analogue method, line out to macbook or something?

I've used this cable into the 3.5mm/optical jack of my Macbook Pro. I wouldn't rely on it for critical recordings, but it works fine if you just want to do quick and dirty demos. I really wish Kemper would add USB audio capability.
My 2008 Macbook has optical in. Obviously, the Kemper has no optical out...so if you want to go digital you need to convert Kemper's electrical to optical, or get an audio interface with coaxial spdif.

I confused the two...
The best recordings I got on a Macbook Pro was using USB from an Apogee Duet.
It has the best preamps of anything I've ever heard under $1k
You can get a used one for near $350, but since it's an audio card with awesome ADC and DAC, the sound back out it for mixing is the most amazing clarity over stock converters in the Mac, which frankly are pretty muddy.
(don't get the Uno, it's not the same at all)
Short of that, other external audio interfaces are suitable, like the Saphire which is preferred by many, but it's not as slim for traveling as the Apogee is.

The Saffire has digital In/Out whereas the Duet hasn't. So one more analog/digital conversion with the Duet.
I agree about its sound quality though.
