@ HELL-G: Good one too, right approach! To be more precise in my 2 cents above: There's nothing wrong with making feature requests and discussing. But it sometimes comes to a point, where I think...puh...too much. By now it's filling threads and threads and threads (and threads). And very often it leads to nothing but playing less guitar. No real pro would waste his time with things like that. Side note: By writing this I'm wasting my time too. Fortunately I'm no pro.

My opinion to this whole discussion is: Think of all those pros we want to sound like. They're not making feature requests, they're not complaining about anything. They're simply dealing with the gear they have, they're looking for solutions for things that don't work as they want them to work and they're making music while we discuss. That's the real difference between them and the most of us.

Hm...I guessed that too. But things are getting more complicated with two mics (e.g. two channels on the mixer are required).

I have a question regarding the JVM212 and in general: How would you mic such a cab with two different speakers live? How can I make sure that the mixed sound of both speakers is captured? Or in other words: What's the best position for the mic?

Sorry, but to my ears the two rigs are switching almost instantaneously. Nobody will ever notice this little gap in a live performance.
Regarding the difference in volume when switching between the two rigs: Maybe this is caused by compression, which kicks back in. But it's the same here: Nobody will ever notice that in this very short time. -
Great to hear/read! Let me tell you, that you have to get used to hear a live played guitar via studio monitors or FRFR solutions. In the beginning I was rolling off the highs like hell, but the more I got used to this new hearing experience, the more I rolled (and still rolling) the highs back in.

Did you ever try to roll off the tone on your guitar? That helped me with gainier sounds.

BTW: Monitor out volume can be controlled via pedal as well (was part of one of the last FW-updates).

I don't know about the difference in overdrive using headphones/IEM and PA speakers. But I do know this: Different speaker = different perceiving/producing of overdrive. Try different cabs with a profile and you'll notice that too. And in the end headphones and PA speakers are nothing more thand two different "cabs". So I'm not very surprised about that.

They all kinda sound fizzy and solid state-ish after using 12" guitar speakers (yes, cabs sims are 'on')
That's not the way to go with guitar speakers! In this case the cab sim must be turned off! With a guitar cab it's best to take the monitor output and turn the cab sim off via output menu (there is a check box). -
