My wild guess is that there's a routing issue. Does your interface have a software mixer, like Apollo Console? Make sure on playback that nothing is coming IN to the mixer...that way you can narrow it down to what's coming OUT of Logic.

I've been very happy with the Massdrop Sennheiser HD-6XX, which is basically a rebranded HD-650 for less $. Everything translates very well.

Ask Michael Britt - he has some that work well for steel. I have a few amps I profiled for steel on the Rig Exchange - search for "BD-PSG".
Lots of clean/low gain stuff works though! Trial & error is the name of the game.
