* The amp volume (controlled with the knob simply marked "Volume") is stored individually with every rig. You should only use it to balance your different rigs to each other so you can switch between them without unintended volume differences (or with intended volume differences!). Therefore, as a rule, it's best to keep it close to the middle. That way, you have room to dial down rigs that are inherently loud or turn up rigs that are quiet.
Amp volume is more of a "set it once and keep it that way" parameter than an ad-hoc volume control. It's something you carefully dial in and store when you're tweaking your rigs for live use, for instance. When you're rehearsing and you want to hear yourself a little better over the drummer, don't give this one a yank like you would with the volume knob on an analog amp (unless you're certain that only the current rig is too quiet). That's what the output volumes are for.
* Monitor volume is one of the different output volumes associated with the different physical outputs on the Kemper -- in this case, the monitor output. In one of the pages of the output settings, you can see these different volumes lined up.
I assume that you will use (one of) the main outputs to connect to your interface, so you should focus on Main volume instead of Monitor volume. If you check the "Link" checkbox above it in the output settings, you can use the Master volume knob to control the Main volume parameter.
* The master volume knob can control different output volumes (Main, Monitor, Direct), depending on which volume parameters you "link" to it in the output settings. This is the one you use to adjust your overall volume to your current playing environment, for instance to balance your Kemper with other instruments in a band. In a studio situation, I simply turn it about as high as I can while keeping a comfortable distance from clipping. For my interface, that's pretty low -- about -20 dB.
So basically turn the monitor output down to -20 or whatever and use the master output to just keep it from clipping?
