Make sure you set the track input to mono. You should see a single circle next to the input setting. Can you pan other tracks fine (virtual instruments, etc?)

You should be able to mix multiple mics to a single Line Out on your Apollo Console and send that back to the Kemper. In fact, I've done it - it works!

Is there any EQ engaged on the master outputs?

Also if you're going mono into your interface, any stereo effects will be heard in mono. The headphone out will be stereo. On headphones, those stereo effects really shine, so that might be part of the problem.
