I am just aligning my finances to allow me to make the purchase still - and am trying to obtain as much info as possible prior to obtaining the unit so that I may hit the ground running once it arrives...!

It is a big investment, so it is definitely worth learning everything you can about it before making your purchase.

I've always known that I wanted to get one - ever since before they released it - when they were first advertising it, I thought 'wow, if this can deliver like it says then it shall be mine!' So I've just waited for them to tweak and perfect it (and the price to fall considerably!) before jumping on the bandwagon... For example, I would have been pretty annoyed if I had plunged for the lunchbox version only for the rack version to be released!
But yeah, I'm just learning about what it can (and can't) do before it arrives so that my time is spent more appropriately once it does arrive.

nEVH5150, I also want to learn everything about a product before I buy any gear and I strongly recommend to always read the full user manual many times. Here is the link to the full kemper manual that must be downloaded from the homepage.

Many of your questions are answered in there. The kemper forum search option is also your friend and almost every question is answered in available threads.Regarding two amps at a time, if you record this is not a problem since you easily can reamp through many different profiles or do two or more different takes like many bands do. It's also possible to profile several amps into one mixed amp profile (not the same as playing two different amps).

I was hoping more for 'live performing' (re. the amp blending) but I guess I can just profile the 2 amps at once for that...
Started to read through the manual documentation but it suggests (and I quote) "It is best to have your guitar and Kemper in front of you" when going through it - so that is what I'll do ...
Again, just getting an image of what its' potential is in my mind before it arrives.

If you are interested then you should want to read it.
Its simple logic, it's packed with information and you don't need a profiler in front of you to grasp what it can do by reading the manual.
Also the kemper wikpa.org is a great source filled with information.

Just to chip in,
I was talking to a friend about the kemper recently and came to the conclusion that if I was still in my band from 20 years ago I would be using two kempers with sounds that compliment each other for a richer sound.
that's not to say that the kemper doesn't sound fantastic. Just that in that particular band I ran 6 different heads, a huge rack of processors and a switching system that cost more than a nice car!
Two rack mounted kempers seems like a huge step forward compared to that bunch of nonsense -
... Not to mention that by buying three you'd still be within the budget
