The one pedal I have that I just haven't been able to re-create is the VFE Triplet. It has indy controls over octave, gain, compression, distortion, filter and level. I have tried a million different ways with the octafuzz and octashapers but to no avail. I don't even know if this is a possibility via software modeling or if it's even legal to copy such a circuit but if it is and it can be done it's the one pedal I'd love to see.
