There are some very useful Kemper Factory profiles with names like "Acoustic A, Acoustic B" etc. in the Kemper Rig Packs that can be accessed in Rig Manager.

What is the "mic approach"?
Or you can profile a patch cable (from send to return) to get a totally transparent Profile with the added benefit of the great AMP parameters like Definition, Compression, Clarity, Pick etc.
I would record with an open mic (mic approach) and the acoustic pickup and blend both for recording especially if you are playing against backing tracks.
I thought Kemper had an acoustic simulator profile/setting..Am I imagining this?? I've seen bands perfom live with Kemper stage, solid body electric getting a lush beautiful natural acoustic sound.... How??

I've never been able to dial in a convincing acoustic using an electric guitar probably because I don't have the right setup. You probably need a guitar with low output pickups and at least 12's for strings, or you really need an acoustic.

Ahhh...I just read up on one of the guitarists I saw...Had a piezo pick-up in the bridge of his solid body PRS... You can't get the "natural" acoustic sound with a standard Humbucker or single coil pick-up...The Fishman piezo for electric guitar. Makes sense!

I do use the acoustic sim for live. Works pretty well with the neck pickup of my strat.
