I'm considering getting a KPA to run in stereo on stage using two guitar cabs and a stereo power amp. Is this possible? (The manual seems to suggest that only the Monitor Out is suitable for driving a real power amp and cab, and that's mono only isn't it?)
Can I route output in stereo to my guitar (rack) amp?

You can use the main outs and switch the cab off, but then you'll need to mic your cabs.

That's OK... That's how I'm running my Axe-FX right now anyway.

That is exactly how I use it and the sound is amazing....with not too much tweaking either.

So is CabDriver engaged when using the main outs? I thought that was the monitor out only.

No, CabDriver is only engaged when using monitor out with the 'cab off' option ticked.
And it's mono only unfortunately.
CabDriver retains a bit of the profile's cab portion incl. the Interaction poweramp - cab, whereas you'll lose this when switching off cab in the main rig.CabDriver is a genius feature IMO.

So if I wanted to run stereo out from my rig to FOH as well as preserving my onstage setup (Matrix into separate cabs in stereo), what would I have to do?

You can have monitor out in stereo no problem, but not with the cabdriver feature then. This can only be had in mono.

How do I route a stereo output to my backline, since the Monitor Output is mono?

You cannot run monitor out in stereo unless you assign the mains to monitor out and direct out, but at this point you can use the 1/4 main outs and switch the cab off. In this case you'll need to mic the cabs...

I have a H&K Red Box, but this can only be attached to one speaker. I suppose if I had two...?

Why buliding bridges that are reducing the functionality of this great tool by setting of the internal cabs and miking the real cabs.....
I also like to get the sound in stereo without cabs into my real rig and in stereo with cabs into the mixing desk. Hey Kempers... this would be a feature for the release of 1.6!
Thx

FYI:
I requested cabdriver for both monitor out and direct out quite a while ago.
The summary of the conversation was that it's not likely to happen as the cabdriver calculation is quite demanding. The consequence is: if you MUST have your signal in stereo on stage you have to go FRFR.

In case you were not interested in a real stereo on stage (I mean stereo chorus & the like) but just needed to feed two signals to the two cabs, you might just use a signal splitter and feed the same signal to both.
