How do I create a profile that is completely blank, ie. no stomps etc., and no tags including author etc.?
ive made some profiles already but they preserve the original author name and some other tags... I awant to create my own completely from scratch.

If you haven't done the actual profiling of an amp+cab yourself, then you can't change some of the author tags (since you would not be the author of the original profile). Is this what you mean?
Keep in mind that it's not like an axe-fx where (i think) you can tweak all the parameters from scratch and BUILD a preset. The kemper is about profiles, not presets.
I agree it would be good to create a blank profile with no tags, parameters etc , with the GR55 you have the option to initialize the preset you have selected which wipes out everything and create a blank canvas to create upon, I suppose the Ancient Rig CK 0 is as close to a blank rig we can get as the profiler must have a profile to be selected

Sorry for the confusion, yes i have created a profile of my amp but I must have used some other author's profile as a template. I was able to change the tags in rig manager so I think I've got it figured out now.

I suggest saving one of your profiles with a name like "0_Template". Remove all the effects, and then use the "replace" function to save the rig.
Then, in Rig Manager, you can edit all of the Tags to your liking.
You can use this Template rig for future profiling.

Hehe, I wasn't sure if he was confusing the profiling process with tweaking a profile and resaving it, which to some could be "making a profile".

I think the closest thing to this is the CK "zero" rig. You can find it in the support section of the Kemper home page. However, this will have tags with it.
