When I create a performance rig using profiles in my browser, Ive noticed that the recording volumes are different. Anyone know the reason for this?

If we're talking about Browse Mode and Perfomance Mode, please understand that the rigs in PM are different entities than their stems in BM.
Make sure they have the same set of volumes.
Also make sure that Clean Sens in PM is set the same as in BM.
Thirdly, also make sure something like an EQ or compressor is not inadvertently locked in one of the two modes.

Many stomps and effects also have volume adjustments that might differ between the PM and BM rigs.

Check the input section, often “locked”, and may have different values for browse and performance mode.
